Beluga caviar is harvested from the Huso Huso, the largest species of sturgeons. Beluga caviar color is usually light gray. The size of the Beluga eggs is largest among all other caviars.
The time that Huso Huso needs to make Beluga caviar is between ten and twelve years. Hence the most valuable caviar in the world is Beluga caviar. Beluga caviar eggs are usually between 3 mm to 3.5 mm diameter. Beluga caviar is divided into two categories: Imperial and Premium Beluga in terms of eggs diameter and color quality. The Imperial Beluga has the largest grains, sometimes reaching 3.5 mm and is also lighter in color.
